Carrot Cake Muffins with Cream Cheese Frosting

Ingredients

  • Grated Carrots – 100g
  • Flora – 200g
  • Wheat flour – 300g
  • Eggs – 04
  • Sugar – 100g
  • Baking powder ½ tea spoon
  • Baking soda – ¼ tea spoon
  • Milk – 10ml
  • Vanilla extract – ½ tea spoon
  • Cream cheese – 100g

Preparation

  1. To a bowl add Flour – 300g
  2. Sugar -100g
  3. Baking powder ½ tea spoon
  4. Baking soda – ¼ tea spoon
  5. Mix the dry ingredients well
  6. To a separated mixing bowl-
    • Add Flora – 150g
    • Add 04 eggs
    • Add 10ml of Vanilla extract
    • Mix with a cake mixer (blender)
    • Little by little add the dry ingredients
    • Mix well
    • Once cake mix is formed well
    • Add 10 ml of milk
    • Add grated carrots – 100g
    • Mix well until there are no lumps
    • Pour it in to cupcake molds
    • Bake at 170 degrees for 25 mins
  7. To a bowl add cream cheese
  8. Add 15g of icing sugar
  9. 10ml milk
  10. Mix well till it comes it in to a consistency to frost the cupcakes
  11. Once cupcakes are baked
  12. Remove from the oven
  13. Let it cool
  14. Frost with the cream cheese frosting
